What is yerba mate?

A naturally caffeinated leaf from South America, and the ritual Argentina shares every day. Here is everything you need to know.

One gourd.

Mate is the dried leaf of Ilex paraguariensis, prepared in a cup (also called a mate) and sipped through a metal straw called a bombilla.

The person who prepares it, the cebador, fills the cup, pours the water and passes it to one person at a time. You drink it all, hand it back, and it travels on around the circle.

It takes two minutes. After the third gourd, it becomes second nature.

  1. 1Fill

    Fill about two thirds of the gourd with yerba.

  2. 2Tilt

    Cover it with your hand, shake gently and tilt the leaves to one side.

  3. 3Wake

    Pour a little cool water on the low side and let the leaves absorb it.

  4. 4Place

    Slide the bombilla into the wet side. Once it is in, don't move it.

  5. 5Pour

    Add hot water, around 70 to 80°C, never boiling. Sip, refill, pass.

Coffee, chai or mate?

Does mate have caffeine?

Yes. Yerba mate is naturally caffeinated. Many people drink it in the afternoon as an alternative to another coffee or an energy drink.

What does it taste like?

Earthy, herbal and slightly bitter, a little like green tea. The first rounds are the strongest, then it softens.

How is it different from chai?

Chai is black tea with milk and spices. Mate is a different plant, drunk without milk, and shared from one cup. Different drink, same idea: a pause with people you like.

Is it safe for everyone?

Like coffee or tea, it contains caffeine. If you are pregnant, breastfeeding or sensitive to caffeine, check with your doctor first.
